Spinach and arugula salad

Tender, spicy, sweet, savory, this has it all!

3 tbsp olive oil
2 tbsp white wine vinegar
½ cup plus 2 tbsp dried sweetened cranberries
3 cups spinach leaves
1 ½ cups arugula
½ cup walnut pieces
¼ cup goat cheese crumbles
fresh ground pepper and kosher salt
To make the dressing, combine oil, vinegar, and 2 tbsp cranberries in a blender or food processor and process until finely chopped. Set for 30 minutes at room temperature. Pour the dressing in the bottom of a salad bowl and add in remaining ingredients. Season with salt and pepper and toss to coat.
